Quick and Easy Banana Muffins

I love banana bread, actually my whole family does. The only part about banana bread that I don't like is how long it takes to bake a loaf LOL. These banana muffins are the perfect alternative as they bake up in half the time a loaf does. Plus it's easy for everyone to grab one and go. Give them a try!

Makes approx. 12 muffins

Ingredients:

  • 4 mashed ripe bananas
  • 1/2 C white sugar
  • 1 egg, beaten
  • 1/3 C melted butter
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 1/2 C flour

Directions:
Preheat oven to 350 degrees F.
Place parchment paper cupcake wrappers in a cupcake/muffin tin or use cooking spray in each cavity and set aside. Whisk together the baking soda, baking powder, salt and flour together in a bowl and set aside. In a separate bowl combine the mashed bananas, sugar, egg and butter together. Combine the dry ingredients with the wet ingredients and mix well.  Pour batter into muffin tin, filling each cavity approximately 2/3 full.  Bake for approximately 20 minutes and check with a toothpick, when toothpick comes out clean, the muffins are done.
