 Rise and Shine Muffins are packed full of flavor, super moist and are sure to get you on your feet in the morning. Bake some for special guests or take them to a brunch, but be sure to save a couple for yourself.

·      2 cups all-purpose flour

·      1 cup granulated sugar

·      2 teaspoons baking soda

·      2 teaspoons ground cinnamon

·      3 eggs

·      1 cup vegetable oil

·      2 teaspoons vanilla extract

·      1 medium apple, grated

·      2 cups of carrots, grated

·      ¾ cup flaked coconut

·      ½ cup walnuts chopped


In a large bowl combine the flour, sugar, baking soda and cinnamon. In another bowl, combine the eggs, vegetable oil and vanilla. Mix the dry and wet ingredients until combined. Fold in the apples, carrots, walnuts and coconut. Place paper liners in cupcake pan and fill each 2/3 full of muffin batter. Bake at 350 degrees for 14-17 minutes or until a toothpick inserted in center of muffin comes out clean.  Let cool for 5 minutes and serve warm. Add a few flakes of coconut on top or a walnut for decoration.
